Rava Kesari

Description :

Ingredients:
Rava / Semolina – 2 cups (Unroasted)
Sugar – 2 cups
Ghee – 1 cup
Water – 4 cups
Crushed cardamom – To taste
Cashew nut
Raisin
Saffron (Add to 2 tbsp milk and warm it.)

Steps:
Heat ghee in a heavy bottomed pan.
Roast raisins and set aside.
Roast cashew nuts and set aside.
Add rava along with some roasted cashews and raisins.
Rest of the roasted cashews and raisins can be used for garnishing.
When the color of rava changes slightly, add water and a pinch of salt and mix well.
When the water comes to a boil, add crushed cardamom and saffron (or food color)
Cook stirring till the mixture thickens.
When it starts to thicken, add sugar.
Keep stirring until the mixture starts to leave the sides of the pan.
Switch off.

Transfer the hot kesari to a plate/dish to set in.
Level it with a spatula.
Garnish with roasted cashews and raisins.
Let it cool completely.
Then cut into small pieces and enjoy!

Notes:
– You may add almonds also.
– Instead of saffron, you can use organic red/yellow food color, if you prefer.

  • hii mia….i used to watch ur videos and i tried some…kesari came out really nice…thank you so much…i kept it in the fridge for using next day but it was not as tasty as the previous day..is it not necessary to keep in the fridge?
