Ottada /Muttayappam/ Mutta Pathiri/ഓട്ട അട Malabar delicacy

Description :

Ingredients:
Raw rice – 1 cup (Soaked for 3 hours)
Thick coconut milk – 1
Egg – 1
Cooked rice – 2 tbsp
Sugar – ½ tsp
Salt
Oil

Steps:
Grind drained rice adding cooked rice and coconut milk to a fine paste.
Add egg, sugar and salt and pulse again. (If you want to make the ottada immediately, add 2 pinches of baking soda also.)
Cover and keep the batter aside in a warm spot overnight or for 3 hours for fermentation.

Heat a heavy bottomed pan. Pan must be very hot.
Mix the batter well and draw it up and down with the ladle every time before pouring to the pan.
Pour the batter into the pan with a ladle.
Cook covered on a medium flame, once it bubbles are formed.
Do not flip.
Once its cooked, remove from the pan.
Enjoy the ottada with sweetened coconut milk or chicken stew (http://y2u.be/g30OKtSn0M0).
