Non Veg Lunch Meal – Basmati rice, Chicken curry, raita

Ingredients:
Basmati rice
Water – Double of the quantity of rice
Cinnamon – 2 small (Optional)
Coriander leaves
Salt
For chicken curry
Chicken – 1 kg (Cut into small pieces)
Onion – 1 big (Finely chopped)
Ginger – 1 big piece (Crushed)
Garlic – 12 fat cloves (Crushed)
Green chilly (Slit open)
Curry leaves
Tomato – 1 medium (Chopped)
Turmeric powder – ½ tbsp
Coriander powder – 1 tbsp
Red chilly powder – 1½ tbsp
Pepper powder – ¼ tbsp
Coriander leaves
Salt
Oil
Garam masala:
Fennel seeds – ½ tbsp
Cumin seed – ¼ tbsp
Cinnamon – 1 piece
Cardamom – 6
Cloves – 8
Star anise – 1
For raita
Cucumber – 2 (Peeled and chopped)
Ginger – 1 small piece (Crushed)
Onion – 2 handfuls (Finely chopped)
Green chilly (Finely chopped)
Salt
Curd
Steps:
Dry roast the whole spices until hot to touch.
Then powder it finely.
Heat oil in a pan to make chicken curry.
Add onion, ginger, garlic, green chilly and curry leaves.
Once the onion starts to turn brown, lower the flame and add turmeric powder. Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add tomato and salt.
Cover and cook on medium flame till the tomatoes are done and oil separates.
Add chicken, salt, coriander leaves, 1tsp of the ground garam masala and pepper powder. Mix well.
Cover and cook on medium flame. Stir often.
Once the chicken releases moisture, cover and cook on medium-high heat.
When chicken is cooked, add remaining garam masala and cook for another 5 minutes.
Adjust salt, garam masala and pepper powder.

Cover and bring water to boil adding cinnamon, to cook rice.
When it comes to rolling boil, add salt, coriander leaves and washed rice.
Increase the flame and bring it to a boil uncovered.
Cook covered on low flame.
Leave it covered for 5 more minutes after it gets cooked.

To make raita, mix cucumber, ginger, onion, green chilly and salt.
Add curd as per taste.
Your meal is ready.
