Ethakkaya / raw 🍌 – 1
Eggs 🥚 – 6
Water 💧
Onion 🧅 1 ½ medium
Garlic 🧄 – 5 cloves
Ginger – 1 small piece
Curry leaves 🍃

Garam masala – as per taste
Turmeric powder – ¼ tbsp
Chilly powder – ¼ tbsp or as per taste
Coriander powder – ¼ tbsp
Chilly flakes
Pepper powder

Hi everyone, today I am here with an easy and delicious lunchbox recipe..
To make the snack, first, finely chop a raw banana into tiny pieces and add it to a saucepan along with some water and cook it on a medium flame with a lid covered.
Do not drain off the excess water, so add water accordingly and if any water remains after the banana is cooked, remove the lid and let the water dry up.
Next, heat some oil in a pan and add finely chopped onion, finely chopped ginger, finely chopped garlic and a few curry leaves and sauté until the onions turn soft, and then add the masalas on a low flame.
First, add a quarter tablespoon of turmeric powder and sauté until its raw smell goes away, then add a quarter tablespoon of coriander powder and sauté until it turns aromatic and then add a quarter tablespoon of chilli powder or chilli powder as per your taste and sauté until its raw smell goes away as well..
Next, add two chopped tomatoes along with some Garam masala to taste and Cook it on a very low flame with a lid closed until the tomatoes turn soft and mushy.. once the tomatoes turn soft, using the ladle, mash it up a little too.
Make sure that the tomatoes cook really well and the oil starts to separate from the gravy.
When this masala is ready, mix the cooked banana into the masala and keep aside, with this the spread is ready.
At this point, taste it for salt or garam masala and add more if needed.
For the next step, break six eggs into a mixing bowl and add some chilli flakes to taste, some pepper powder to taste, salt to taste and garam masala to taste and whisk it up really well..
Now, heat a pan and add some oil into it and then add a layer of the beaten eggs and cook it until it’s 3/4th done..
When the first layer is almost done, add the prepared banana filling and spread it into an even layer on top of the egg and add the remaining egg on top and cook on the lowest flame possible, with a closed lid, until the second layer of egg starts to cook and solidify.
Once the top layer looks almost done, sprinkle some cheese on top if needed, and flip it and cook on the other side..
you can take the help of another plate to flip the snack as you can see in the video.
When done on both the sides, transfer to a serving plate, cut and serve.. 🍕
