Neyyappam |Traditional Kerala Neyyappam|നെയ്യപ്പം
Description :
Ingredients:
Raw rice / Pachari – 2 cups / 400g
Maida / All purpose flour / Plain flour – 2 tbsp
Jaggery – 300g or as per your taste (Melted in very less water; as thick syrup)
Ghee – 1 tbsp
Cumin seeds – ½ tsp
Black sesame seeds – ½ tsp
Cardamom – As per taste (Crushed)
Baking soda – 2 pinches
Salt
Coconut oil – For frying
Steps:
Wash the rice well and soak for 4 hours.
Drain the rice and grind it adding very little water.
Do not grind to a very fine paste. A slightly coarse thick paste is desired.
Transfer it to a bowl.
Add ghee and maida to the ground rice and mix well.
Knead well and make a dough.
Add jaggery syrup, cumin seeds, black sesame seeds, baking soda, crushed cardamom and salt and mix well.
The consistency of the batter should be that of the idli batter.
Cover and let it rest for 2 hours.
Heat coconut oil in a pan.
Pour a ladle of batter to the center of the pan, on high flame.
When the neyyappam starts floating on the top, reduce to medium.
Flip and cook both sides till golden brown.
Remove and repeat with the rest of the batter.
