Nadan Muringakka Parippu Curry / Drumstick and Toor Dal Curry നാടൻ മുരിങ്ങക്കാ പരിപ്പു കറി
Description :
Ingredients:
Toor dal – 3 handfuls
Drumstick – 3 (cut into 3″ pieces)
Grated coconut – 3 handfuls
Cumin seeds – 1tsp + ½ tsp
Ginger – 1 big piece (Finely chopped)
Garlic (Finely chopped)
Onion – 1 medium (Thinly sliced)
Green chilly – as per taste
Turmeric powder – 1 tsp
Red chilly powder – 1 tbsp
Tomato – 2 (chopped)
Mustard seeds – 1 tbsp
Onion / shallots (Finely chopped)
Dry red chilly
Curry leaves
Coriander leaves
Coconut oil
Salt
Steps:
Pressure cook dal adding required water for one whistle on high flame and then for 10-15 minutes on medium flame.
Grind coconut and 1 tsp cumin seeds to a fine paste adding some water.
Heat oil in a pan.
Add ½ tsp cumin seeds.
Add green chillies, onion, garlic and ginger.
When the onion becomes soft, lower the flame and add turmeric powder. Sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add tomato and salt. Mix well.
Add cooked dal and drumstick.
Add more water and cook covered.
Bring it to boil then lower the flame.
Once its half cooked, add ground coconut.
If the gravy is thick, add more water.
Cook covered for 10 minutes. Don’t overcook.
Heat oil in a pan. Splutter mustard and add dry red chillies.
Add onion and curry leaves.
Add turmeric powder and roast on low flame.
Switch off and add this to the curry.
Add coriander leaves.
Leave it covered for a minute.
Enjoy the muringakka parippu curry with rice.
