Naadan Varutharacha Cauliflower Curry/Simple and Delicious !

Ingredients:
Cauliflower – 600g (Split into medium size florets)
Onion – ½ of a big one (Thinly sliced)
Ginger – 1 big piece (Crushed)
Green chilly (Finely chopped)
Curry leaves
Tomato – 1 big
Turmeric powder – ¼ tsp
Curry leaves
Salt
Oil
To roast and grind:
Grated coconut – 3½ handfuls
Coriander seeds – 3tbsp
Pepper – ½ tsp
Dry red chilly
Cloves – 7
Cardamom – 4
Star anise – 1
Cinnamon – 1 big piece
Fenugreek – A pinch
Fennel seeds – 1tbsp
Cumin seeds – ½ tbsp
Curry leaves
Turmeric powder – 1 tsp
For tempering:
Coconut oil
Mustard seeds – ½ tsp
Dried red chillies – 2
Shallots
Curry leaves
Turmeric powder – A pinch
Red chilly powder – A pinch
Steps:
Heat a pan and add coconut, coriander seeds, pepper, dry red chilly, cloves, star anise, cinnamon, fenugreek, fennel seeds, cumin seeds and curry leaves.
Once the coconut becomes hot, add some oil to roast the coconut.
Roast on medium flame.
When the coconut starts to turn brown, add turmeric powder. Sauté on low flame till the raw smell goes away.
Once the coconut turns golden, switch off and transfer it to a bowl to cool down.
Grind it to a smooth paste adding some water.
Heat oil in a clay pot.
Add onion, ginger, green chilly and curry leaves.
When the onion turns soft, add turmeric powder.
Add ground coconut paste, some water, tomato and salt.
Increase the flame.
Cover and bring it to a boil.
Add cauliflower.
Cover and let it boil till gravy thickens a bit.
Switch off.
Heat oil in a pan for tempering.
Add mustard seeds and let it splutter.
Add dry red chilly and curry leaves.
Add shallots
Add turmeric powder and roast on low flame.
Switch off and add this to the curry.
Leave it covered for a minute.
