Naadan Mutta Roast – Kerala Style Egg Roast – Dry Egg Curry Episode :830

Description :

Ingredients:

Boiled eggs – 5

For marination
Red chilly powder – 1/2 tbsp
Turmeric powder – 1/4 tbsp
Pepper powder – 1/2 tbsp
Salt
Water

To roast and grind:
Coconut slices – 4 or 3/4 handful of grated coconut
Garlic – 5 big cloves
Whole dried red chilly – 1.5 handful
Cloves – 5
Fennel Seeds – 1/2 tsp
Oil

Onion – 1 large
Turmeric powder – two pinches
Tomato – 1/2
Oil

Method:

Make a medium thick paste of red chilly powder, turmeric powder, pepper powder and salt adding little water.

Poke holes on the eggs and add them to the prepared mixture. Let it rest.

Heat oil in a pan add whole dried chillies, cloves, sliced garlic and coconut slices.

Once it starts browning, reduce the flame and add fennel seeds. Mix well.
Switch off. Transfer this (without oil) to a mixie and grind it to a smooth paste adding little water.

Add the marinated eggs to the same pan and shallow fry on medium flame. Remove once it gets roasted.

Add little more oil to the pan and sautè finely chopped onion til golden brown. Add turmeric powder and roast well.
Add tomato, salt and finely ground paste.
Add 3/4 glass water and bring it to boil.
Add roasted eggs and cook covered til gravy thickens stirring in between.
Garnish with coriander leaves.
Enjoy with rice, chapathi , bread or kubus.
