Naadan Chemmen Curry/നാടൻ ചെമീൻ കറി|| shrimp curry
Description :
Ingredients:
Prawns / Shrimp – ½ kg (Weighed before cleaning)
Raw mango – 1 big (or 2 handfuls of dry mango)
Ginger (chopped)
Green chilly (slit opened)
Onion (sliced)
Turmeric powder – 1½ tsp
Chilly powder – 1½ tsp
Thick coconut milk
Thin coconut milk
For seasoning:
Onion or shallots chopped
Curry leaves
Dry red chilly
Mustard seeds – 1 tbsp
Turmeric powder – ¼ tsp
Coriander powder – 1 tbsp
Red chilly powder
Steps:
Add prawns, onion, ginger, green chillies, curry leaves, turmeric powder, chilly powder, salt and enough water to a clay pot.
Mix well and bring it to a boil.
Cover and cook until it is half done.
Add mango and thin coconut milk. (If the mango is not sour enough, add a piece of kudampuli as well.)
Mix well and cook till the gravy thickens.
If it is watery, cook uncovered and let the excess water evaporate.
Add thick coconut milk and let it boil. Turn off the fire.
Heat coconut oil in a pan and splutter mustard seeds.
Add dry chillies, curry leaves and onion.
Once the onion starts to brown, add turmeric powder. Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Switch off and add this to the curry.
Leave it covered for a minute.
Enjoy the chemeen curry with rice.
Note:
– To make dry mango, chop the raw mangoes and add salt. Mix well and let it rest for 2-3 hours. Then dry it in the hot sun.
– Soak dry mango for 30 minutes before using. Use it along with the water it is soaked in.
