Ingredients:
Carrot – 2
Beans – 1 handful
Cauliflower – 1 big floret
Potato – 2 big
Peas – 2 handfuls
Onion – 1 big (Thinly sliced)
Garlic – 3 fat cloves
Ginger – 1 medium piece
Cashew nuts – 3½ tbsp
Turmeric powder – 1 tsp
Coriander powder – 2 tsp
Red chilly powder – ¾ tbsp
Bay leaf – 2
Tomato – 1
Green Chilly – 3
Vegetable oil
Salt
For garam masala
Fennel seeds – 1 tbsp
Cumin seeds – ½ tsp
Star anise – 1
Cinnamon – 1 small
Cloves – ¼ tsp
Cardamom – 1½ tbsp
Steps:
Heat oil in a pan.
Add the whole spices, followed by onion, garlic and ginger.
Add cashew nuts.
When the onion starts to turn brown, lower the flame and add turmeric powder, coriander powder and red chilly powder.
Once the raw smell is gone, add tomato and salt.
Cover and cook on medium flame till the tomatoes are done.
Switch off and let it cool. Grind it to a smooth paste.
Transfer the ground masala to the pan.
Add water, bay leaf, vegetables, green chilly and salt.
Bring it to boil. Cover and cook on medium flame till the vegetables are cooked.
Once the vegetables are cooked and the gravy thickens, add kasoori methi and switch off.
