MIA’S KITCHEN- KOZHIKODE BIRYANI /EPISODE 36

Description :

Ingredients:
Chicken – 1 kg
Ginger – 1 big piece
Garlic – 12 fat cloves
Curd – ½ cup
Salt

For the masala:
Onion – 4 (Thinly sliced)
Green chilly – As per taste (Chopped)
Turmeric powder – ½ tbsp
Coriander powder – 1 ½ tbsp
Red chilly powder – 1 tbsp
Coriander leaves
Mint leaves
Salt
Oil / Ghee

For garam masala:
Fennel seeds – 1½ tsp
Cumin seeds – 1 tsp
Poppy seeds – ½ tsp
Cardamom – 10
Mace – 1 small piece
Cinnamon – 1 small piece
Cloves – 7

For rice:
Basmati rice – 1½ cup
Water – 2¾ cup
Onion – 3 (Thinly sliced)
Fennel seeds – ½ tsp
Cumin seeds – ½ tsp
Cinnamon – 1 small piece
Cardamom – 7
Cloves – 7
Bay leaves
Ghee
Salt

For garnishing:
Coriander leaves
Boiled and deshelled eggs

Steps:
Make a paste of ginger and garlic.
Marinate chicken with ginger garlic paste, curd and salt and set aside for 30 minutes.

Finely powder the whole spices – fennel seeds, cumin seeds, poppy seeds, cardamom, mace, cinnamon, cloves. Set aside.

Heat oil/ghee in a heavy bottomed pan to make the masala.
Add onion and saute till it turns brown adding a pinch of salt.
Lower the flame and add turmeric powder. Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add garam masala and mix well.
Add marinated chicken and mix well.
Cover and cook on low flame for 5 minutes.
Add coriander leaves and mint leaves.
Cover and cook the chicken.
Switch off once the chicken is cooked.

Heat ghee in a pan to cook rice.
Add whole spices – fennel seeds, cumin seeds, cinnamon, cardamom, cloves and bay leaves.
Once it becomes fragrant, add onion and saute till it becomes golden.
Add water, rice and salt.
Cover and bring it to boil.
Then cook on low flame till the rice is done.

To set the biriyani, add a layer of rice in a dish.
Then add a layer of chicken masala.
Repeat for the rest of the rice and masala.
Garnish with eggs and coriander leaves.
