Kerala Kaada Roast കാട റോസ്റ്റ് Quail roast / Nadan Kaada Varattiyathu

Description :

Ingredients:
Quail / Kada – 6 (Cut into small pieces)
Onion – 2 small
Garlic – 3 big bulbs
Ginger – 1 big piece
Whole black pepper – 1 tbsp
Curry leaves
Green chilly
Turmeric powder – ½ tbsp
Coriander powder – 1 tbsp
Red chilly powder – ½ tbsp
Garam masala – ¼ tbsp
Salt
Coconut Oil

Steps:
Crush ginger, garlic and pepper.

Heat oil in a pan. Add crushed ginger, garlic, pepper, onion, curry leaves and green chilly.
When the onion turns translucent, reduce the flame and add turmeric powder, coriander powder, and red chilly powder.
Once the raw smell of masala powders is gone, add quail and salt. Mix well.
Cover and cook on medium heat stirring occasionally.
Once it is half cooked, add garam masala and cook covered.
Cook uncovered once it is 75% cooked.
Transfer to a plate and enjoy with naadan kallu or just eat it as such!
