How To Make Mango Halwa/മാമ്പഴ ഹൽവ
Description :
Ingredients:
Mango Pulp – 3 cups (I used 4 mangoes)
Custard Powder – 4 tbsp (Heaped)
Water – 1½ cup
Sugar – 5 tbsp or as per the sweetness of the mango
Cashew Nuts – 2 handfuls
Coconut Oil or Ghee – ¾ cup
Steps:
Mix custard powder well with 1½ cup water and keep aside.
To make mango pulp, grind peeled mangoes well without adding water.
Heat ¼ cup oil in a pan. Add mango pulp to it.
Cook on high flame for 5 minutes stirring continuously.
Lower the flame and add sugar once it starts drying up.
Add more sugar, if needed.
Cook on high flame until the sugar melt and mix with the pulp. Stir continuously.
Lower the flame. Stir the custard powder mix well and add to the pulp.
Cook on high flame stirring continuously.
Add ¼ cup oil, once the bubbles form.
Once it starts to thicken, add cashew nuts. Mix well and continue cooking.
Add the remaining oil and cook further.
Switch off when the mix starts to leave the sides of the pan.
It takes around 35 to 40 minutes to get it done.
Switch off and transfer to a plate.
Level it with a spatula. Let it cool completely.
Once cool, run a knife through the sides.
Cut into pieces and enjoy the mango halwa.
