How To Make Ellunda/ എള്ളുണ്ട/ Sesame Seed Balls

Description :

Ingredients:
Sesame seeds – 110g / ¾ cup (Black sesame seeds tastes better)
Jaggery – 150g
Ghee – 1 tbsp

Steps:
Dry roast sesame seeds till hot to touch.
Switch off when it starts to pop and turn golden.
Remove and set aside.

Melt jaggery in 10 tbsp water.
(Strain the jaggery syrup, if it has any impurities.)
Cook the jaggery syrup to single string consistency.
To check the consistency, add a few drops to a glass of water.
It should stay firm without mixing with the water.
That is the correct consistency.
Lower the flame and add sesame seeds.
Add 1 tsp ghee and switch off.
Let it cool down a bit.
Once it becomes lukewarm, make smalls out of it.
Let it cool down and harden.
Enjoy the ellunda.
(If the mixture cools down, add a few drops of water and reheat before making balls)
