How To Make Chinese Chicken Fried Rice

Description :

Ingredients:
Basmati rice – 1½ cup / 300g
Boneless chicken – 500g (Cut into small pieces)
Cornflour – As needed
Pepper powder – 1¼ tbsp + ¾ tbsp
Soya sauce – 3½ tbsp + 2 tbsp
Carrot (Chopped)
Beans (Chopped)
Eggs – 2
Onion – 1 big (Chopped)
Chilly paste – 2 tbsp (Recipe – http://y2u.be/PVIaSlbzAWs)
Ginger – 1 big piece (Chopped)
Garlic – 5 cloves (Chopped)
Oil

Steps:
Add chicken, 1¼ tbsp pepper powder, soya sauce, salt and cornflour to a bowl and mix well.
Add enough cornflour to give the chicken a nice coating.

Bring water to a rolling boil in a big pan.
Add salt and check taste. It must be slightly more.
Wash the rice well and add to the boiling water.
Cook covered. Once it comes to a boil, reduce the flame and cook till it is ¾th done.
Drain water and spread it in a plate to cool down.

Heat oil in a pan.
Add chicken and cook till it changes the colour.
Don’t fry till it becomes crispy.

Heat oil in a thick bottomed pan.
You can use the same oil which is used to fry chicken.
Add eggs and salt and scramble it.
Remove and set aside.

Add some more oil to the pan and add ginger and garlic.
Once the raw smell goes away, add carrot and beans.
Cook on high flame stirring continuously.
Once it is done, add onion and mix well.
Add ¾ tbsp pepper powder and mix well.
Add chilly paste and mix well.
Add chicken. Mix well.
Add rice, scrambled egg and 2 tbsp soya sauce.
Mix thoroughly from all the sides.
Check taste and add soya sauce if needed. Switch off.
Enjoy the chicken fried rice.
