How To Make Aravana Payasam/Onam special

Description :

1 cup = 250ml

Ingredients:
Kuthari – ¾ cup
Ghee – 1 tbsp
Water – 3 cup

Jaggery – 500g – 600g (Choose dark variety)
Ghee – ½ cup
Coconut bits
Cardamom powder
Dry ginger powder

Steps:
Heat 1 tbsp ghee in a pan.
Add rice.
Once it becomes hot, add water.
Bring it to a boil.
Cover and cook on a low flame.

Heat a heavy bottomed pan and melt jaggery adding ¾ cup water
Strain the jaggery syrup.

Add this to the cooked rice and bring it to a boil. Make sure that the rice is completely cooked before adding jaggery syrup.
Cook stirring till the mixture becomes dry. Add ghee in batches.
Once it is almost done, add cardamom powder and dry ginger powder.
When it becomes dry, switch off.

Roast coconut bits in ghee and add this to the payasam.
It tastes better the next day.
It stays good without refrigeration for 2-3 days.
