Easy Rice Pudding Recipe Mia Kitchen

Ingredients:
Raw rice / Basmati rice – ½ cup (I used Idli rice)
Sugar – ½ cup
Milk – 3 cup
Condensed milk – 3 tbsp (Recipe – http://y2u.be/fZptrVq6nI0)
Saffron – 2 pinch (optional)

Heavy cream / Whipping cream – ¾ cup
Powdered sugar – ¼ cup

Steps:
Pulse the rice in a mixie.

Wash the rice well and add to a thick bottomed pan.
Add milk and sugar.
Bring it to a boil and cook stirring till starts to thicken.
Add condensed milk and saffron. Mix well.
Cook covered on a low flame stirring in between till it becomes thick and rice gets cooked.
Once it separates from the pan, turn off the fire.

Grease the sides of a pudding dish with butter.
Transfer the rice mix to the dish.
Leave it in the fridge to cool down.

Add heavy cream and powdered sugar to a mixing bowl and beat till creamy and fluffy using a hand beater / whisk.
Start with low and increase the speed as you go.
You may also add some vanilla essence to this.

Spread this on the cooled pudding and garnish with nuts of your choice.
Keep it in the freezer and let the cream topping set.
Remove from freezer and keep it in the fridge 45 minutes prior to serving.
Cut into pieces and serve the rice pudding.
