Easy and Tasty Kerala varutharacha Muringakka Sambar
Description :
Ingredients:
Toor dal – 3 handfuls
Drumsticks – 3
Tomato – 1
Onion – 1 small (Cubed)
Curry leaves
Green chilly – 3 small
Grated coconut – 3 handfuls / ¼ of a coconut
Urad dal – 1½ tsp
Chana dal – 1 tbsp
Fenugreek – 1 pinch
Dry red chilly
Coriander seeds – 3 tbsp
Turmeric powder – 1 tbsp
Asafoetida / Hing (Recommended to use the bar instead of powder)
Tamarind
Mustard seeds – 1 tsp
Fenugreek – 1 pinch
Curry leaves
Dry red chilly
Onion/ shallots – chopped
Coriander leaves
Oil
Salt
Steps:
Pressure cook toordal adding enough water on high flame for 1 whistle and then for 10 minutes on medium flame.
Switch off and let the pressure release naturally.
Heat coconut oil in a pan to roast coconut.
Add asafoetida and roast till it becomes soft.
Add coconut, urad dal, chana dal, fenugreek, curry leaves, dry red chillies and coriander seeds.
Fry till coconut becomes brown colour.
Lower the flame and add turmeric powder and sauté till the raw smell goes away.
(If you are using coriander powder instead of seeds, add 1½ tbsp coriander powder at this stage.)
Switch off and transfer it to a bowl to cool down.
Once cool, grind it to a fine paste.
Add green chillies, onion, curry leaves, tomato, drumsticks, coconut paste, water and salt to the cooked dal. Mix well.
Cook covered on medium flame. Don’t pressure cook.
Once drumsticks are cooked, add tamarind juice and boil well.
(If you are using asafoetida powder instead of the bar, add at this stage.)
Add coriander leaves.
Turn off the fire.
Heat oil in a pan.
Add mustard seeds and let it splutter.
Add fenugreek, curry leaves and dry red chillies.
Add chopped onion.
Add ¼ tsp of turmeric powder and fry till the raw smell goes.
Switch off and add this to the sambar.
Leave it covered for a minute.
Enjoy the sambar with rice, idli or dosa.
