Easy and Spicy Vendakka Egg Fry||Okra Egg Masala

Ingredients:
Ladies finger / Bhindi / Okra – 200g
Egg – 2
Tomato – ½ of a medium sized
Onion – 1 medium (Finely chopped)
Garlic – 4 (Chopped)
Ginger – 1 small piece (Crushed)
Curry leaves
Green chilly – 2 or 3 (Chopped)
Turmeric powder – ½ tsp
Red chilly powder – 1½ tbsp
Garam masala
Salt
Oil
Steps:
Wash and wipe each ladies finger dry before cutting into small pieces.
Heat coconut oil in a pan or a clay pot.
Add onion, ginger, garlic, green chilly and curry leaves.
Once the onion becomes soft, add ladies finger and salt.
Cook till it is ¾th cooked.
Add turmeric powder and sauté till its raw smell goes.
Add red chilly powder and sauté till its raw smell goes.
Lower the flame and add tomato.
Cook uncovered till the tomato becomes soft.
Add garam masala and mix well.
Add eggs and stir continuously on high flame.
Saute and cook till its cooked and mixed well with the ladies finger.
Turn off the fire. Enjoy with rice and chappathi.
