Chettinad Mutton Curry||Aatu Curry ||Excellent for chapati, puri & Rice
Description :
Ingredients:
Mutton – ½ kg (Cut into medium big pieces)
Tomato – 2
Ginger – 1 big piece
Garlic – 10 big cloves
Onion – 2 medium (Finely chopped)
Turmeric powder – ¾ tbsp
Coriander leaves
Salt
Oil
For masala:
Grated coconut – 4 tbsp
Dry red chilly
Cinnamon – 1 small piece
Star anise – 1
Cardamom – 5
Clove – 6
Fennel seeds – ¾ tbsp
Cumin seeds – ½ tbsp
Coriander seeds – 2 tbsp
Pepper corns – 1 tbsp
Steps:
Heat a pan and add dry red chillies, cinnamon, star anise, cardamom, cloves, fennel seeds, cumin seeds, pepper corns, coriander seeds and grated coconut.
Dry roast till the coconut becomes dry.
Switch off and let it cool.
Grind it to a fine powder and then to a fine paste adding water.
Make a paste of ginger and garlic.
Grind the tomatoes to a fine paste without adding water.
Heat oil in a pressure cooker.
Add onion and ginger garlic paste.
Lower the flame and saute well till the onion turns golden.
Add turmeric powder and sauté till the raw smell goes away.
Add tomato paste and salt.
Mix well and cook covered on medium flame till the oil separates.
Add the ground masala, mutton and salt. Mix well.
Cook covered on medium flame for 10 minutes.
Add water just to the level of mutton.
Pressure cook for a whistle on high flame and then for 15 minutes on medium flame. Check the mutton and cook for a few more minutes, if required.
If there is excess gravy, cook uncovered till the gravy becomes thick.
Add chopped coriander leaves.
Turn off fire. Transfer to a serving bowl.
Enjoy the Chettinad mutton curry with rice, chapati or parotta.
