Chemmeen Achar-Shrimp Pickle

Ingredients
Shrimp – ½ kgms.
Ginger garlic paste – Grind 1 large piece ginger with 20 garlic in a blender without water.
Tomato chopped – ½ nos.
Turmeric powder – ½ tbsp.
Kashmiri chilli powder – as needed.
Asafoetida powder – ½ tbsp.
Fenugreek powder – ¼ tbsp.
Mustard seeds – 1 tbsp.
Dried chilly – as needed.
Curry leaves – as needed.
Vinegar – as needed.
Coconut oil – as needed.
How to make fenugreek powder & asafoetida powder
Heat fenugreek seeds in a pan. Grind without water in a blender.
Heat oil in a pan, add asafoetida, saute till fried. Grind in a blender without water.
Method
Marinate shrimp with salt, ½ of turmeric powder, 1 tbsp chilli powder. Let it rest for 30 minutes.
Heat oil in pan. Fry the shrimp at medium flame. Move to a bowl.
Heat oil in a pan.Splutter mustard seeds. Add dried chilli, curry leaves, ginger and garlic. Saute till fried.
Turn heat to medium. Add turmeric powder, stir for a couple of minutes.
Add chilly powder, mix well. Saute till fried.
Add tomato and salt. Mix well. Turn heat to low. Cover and cook the tomato. Make sure tomato is cooked well for a longer life for the pickle.
Add fenugreek powder, asafoetida powder and vinegar. Mix well. Turn heat to medium. Mix well by stirring occasionally for about 3 minutes.
Add fried shrimp and mix well. Check for vinegar and add more if required. Switch off flame and let it cool completely. Store the pickle in an airtight container and enjoy!!!

can we make kadukka achar with this recipe ?
Add shallots first in oil after frying prawns . For a kg of prawn add one kg of shallots for gravy it will increase the quantity as well as quality of the pickle. Shallots have to fried extremely well or else the pickle will not last longer.
