Hi everyone, today let’s make two easy dishes using wheat flour..One is a crispy wheat Dosa and the other is a spicy teatime Vada..
SPICY WHEAT VADA
Wheat flour – 1 cup
Rice flour – ½ cup
Green chilli – 4 or as per taste
Onion – 1, medium
Curd – ½ glass
Cumin seeds – a little
Pepper powder – to taste
Coriander leaves – a small bunch
Ginger – 1 big piece, crushed
Baking soda – ¼ tsp
Salt – to taste
Oil – to fry
First let’s prepare the batter to make the spicy wheat vada..
To make the batter, in a mixing bowl combine together finely chopped onion and a little salt and mix it thoroughly with your hands..
Into the same bowl, add crushed ginger, chopped coriander leaves, chopped green chilies, half cup of rice flour, a cup of wheat flour, half a glass of curd, which is not really sour, a small pinch of cumin seeds, some pepper powder to taste and ¼ teaspoon of baking soda..
Mix this really well, and add enough water to make this into a Vada batter, with the consistency as seen in the video..
You can use roasted or non roasted rice flour for this recipe, and if you do not have measuring cups to measure the ingredients, you make use normal drinking glass, but make sure to use the same glass to measure both rice flour and wheat flour.
If your curd is very sour, you need to adjust the consistency accordingly, and if you do not have curd, you can use buttermilk as well..
Mix the batter really well so that all the ingredients are evenly spread and are mixed well..
Once the batter is ready, leave it to rest for around 30 minutes.
After 30 minutes, you can fry the batter in the oil, dropping little balls of the batter in the oil..
Make sure to cook it on a medium flame so that it cooks through..
Increase the flame to the highest immediately before they are ready to be removed from the oil, so that all the extra absorbed oil is released..
Once the Vada is crispy and golden on the outside, remove it from the oil and serve..!!
WHEAT DOSA
Wheat flour – 2 cups
Rava – ¼ cup
Salt – to taste
Baking powder – 1 tsp
Ghee – 4 tbsp
Curd – ¾ cup
To make the crispy wheat Dosa, in a large mixing bowl, add 2 cups of wheat flour and ¼ cup of powdered Rava..
Season it with some salt to taste and add a teaspoon of baking powder to it
Next, add 4 tablespoons of ghee or butter and ¾ cup of curd..
If you do not have both ghee or butter, you can use regular cooking oil as well, but the ghee or butter will give it a better taste
After adding the curd, mix it really well with your hands to incorporate all the ingredients, and then add enough water to make it into a smooth Dosa batter
Since the weather outside is cold, the better has got a lot of lumps in it, so I am going to blend this to get a very smooth consistency..
Once the batter is smooth and ready, transfer it into the same mixing bowl and let it sit for around 30 mins to two hours, depending on how much time you have on hand..
If you’re planning to rest the batter for more than two hours, you may leave it in the refrigerator.
The batter might thicken up a bit after resting because it has rava in it, which absorbs a lot of water.. So it’s okay to add a little extra water to the batter, to adjust the consistency..
Once the battery is rested and ready, you can prepare Dosa on a medium hot pan.. If your pan is too hot, you will have trouble spreading the dough..
After spreading the batter, drizzle a little oil so that the Dosa can get crispier..
Once the Dosa is cooked and golden on the bottom, remove from the pan and serve..
Make sure that the batter is not too thick, else you will not be able to spread it thinly to get crispy dosas..
