Milk – 1 cup + 2 tbsp + 2 cups
Water – ½ glass
Instant coffee powder – 1 tsp
Sugar – 2 tbsp + 5-6 tbsp
Corn flour – 2 tbsp
Milk powder – 3 tbsp
Cocoa powder (optional)
Vinegar – 1 tsp

Hi everyone, today let’s see how to make a creamy and delicious pudding without using heavy whipping cream or any type of cream.. we will only need milk for this recipe.

First, in a saucepan, bring a cup of milk to a boil and add a teaspoon of vinegar or lime juice and keep mixing it until the milk starts to curdle and the milk solids separate from the water.

Once the milk solids and the water separate, transfer the mixture into a sieve or a cheesecloth and hold/wash it under running tap water to wash off any sour taste of the vinegar or lime juice that you added to curdle the milk.

Once it’s washed, squeeze out all the water from it and add the prepared milk solids(paneer) into a mixer grinder and grind it into a smooth paste by adding little milk as required.. I added 2 tablespoons of milk in two batches. Grind the mixture and keep aside..

Next, we can lay the first layer of pudding.. For that, keep a pudding tray ready and prepare some black coffee by dissolving a teaspoon of instant coffee powder and 2 tablespoons of sugar in half a glass of hot water.

Dip a few biscuits in the prepared black coffee and lay it in the pudding tin to cover its base completely. You may pour a little more black coffee on top of the biscuits so that the biscuits can absorb a little more coffee and turn soft.

Once the first layer is done, let’s prepare the second layer by mixing 2 tablespoons of cornflour, 3 tablespoons of milk powder and 5 to 6 tablespoons of sugar in 2 cups of milk.

After mixing everything well in the milk, place it on the stove and turn on the heat and keep stirring it continuously until it starts to get thick and creamy.. do this on a low flame.

Once the mixture starts to let out large bubbles, turn off the flame and keep mixing it for another couple of minutes, to fully use the heat of the saucepan.

One thing to keep in mind while thickening the second layer is that the mixture should not be too thick nor too thin.. It should be in a medium thick consistency so that the pudding has a buttery texture when it’s done

Let the mixture completely cool down and then transfer into a mixer grinder and blend it really well to get a creamy and smooth consistency.. while grinding, add the first paneer mixture which we had prepared with the curdled milk..

Once this mixture is ready, make sure that the biscuits are soft and soaked well in the instant coffee.
If the biscuits are not soft, you may add a little more of the remaining instant coffee on top of the biscuits so that they get soft.
