CRISPY RICE FLOUR FINGERS
Rice flour – 1 cup (any type)
Water – ½ cup + ¼ cup
Garlic – 2 big cloves
Grated coconut – a handful or 5 tbsp
Dried red chillies – 5
Cumin seeds – ½ tsp
Blacks sesame seeds – to taste
Salt – to taste
Oil – 1 tbsp + to fry

Hi everyone, today let’s make crispy rice flour fingers as a tea time snack.. This snack tastes very similar to our kuzhalappam.. so do not forget to make these at least once..

To prepare this snack, first make a fine paste out of 5 tablespoons of grated coconut, half a teaspoon of cumin seeds, and five dried red chilies, along with half a cup of luke warm water, in a mixer grinder..

If you want the snack to be a little more spicier, you can increase the number of dried red chilies to 5 or 7.. Also make sure to measure both water and rice flour in the same cup or glass..

Once the paste is ready, transfer the paste into a saucepan along with ¼ cup of extra water and some salt to taste.. (total ¾ cups of water for 1 cup of rice flour)

While mixing the paste and water into the saucepan, you may also add a few chopped curry leaves.. I am skipping it because I do not have curry leaves available.

Next add some black sesame seeds to taste, to the prepared paste and place the saucepan on the stove and bring to a boil..

Once the mixture comes to a boil, add a cup of rice flour into the saucepan and mix it really well with the paste, on a very low flame..

Mix everything well and try to knead it into a nice dough as you can see in the video.. if you feel like the mixture is too dry, you may add a little extra boiling hot water to adjust the consistency of the dough..Please note that the dough should be in the consistency of a Chapati dough..

Once the dough is ready, transfer it onto a plate, and add a tablespoon of oil to it and knead it into a smooth dough.. you can use any oil of your choice..

Do this step while the dough is still manageably hot..do not wait for it to completely cool down.

After adding the oil, knead well and roll the dough into a smooth ball and separate even smaller balls from the dough and roll it in between your palms into thin fingers..

After the fingers are ready, fry them in oil until golden and crispy.

Make sure to fry this on a medium to low flame so that they cook through..

If they break while handling, it’s because the dough is too dry! (Add a tbsp or two of more water and knead again, if that happens)

Once they are crispy and golden, remove them from the oil and transfer it onto a serving plate..

Increase the flame to the highest immediately before you remove it from the oil, so that they can release all the absorbed extra oil..
