ഹോട്ടലിൽ കിട്ടുന്ന ചപ്പാത്തി ,പൂരി കറി || വെജിറ്റബിൾ കറി || CHAPATHI CURRY | SIMPLE VEGETABLE CURRY
Description :
Potato – 1 large or 350g, boiled
Onion – 1 big
Carrot – 1 small
Green peas – a little, boiled (cooked)
Curry leaves
Coriander leaves
Green chilies – as per taste
Cumin seeds – 1 tsp
Kadala paripp – 1 tsp
Mustard seeds – 1 tsp
Turmeric powder – ½ tablespoon
Maida – 1 tbsp
Water – ¾ mug (boiling hot)
Salt to taste

Hi everyone, to make this delicious potato curry, first heat some coconut oil in a pan and add a teaspoon of mustard seeds into it.
Once the mustard seeds pop, add a teaspoon of cumin seeds and a teaspoon of kadala parippu and roast until the kadala parippu turns golden in colour..
Next, to the same pan, add finely chopped ginger, chopped green chilies, thinly sliced onion and a few curry leaves and give everything a good mix.
Next, finely chop a big piece of carrot and add to the pan and roast well.
After a couple of minutes, add some cooked green peas into the pan and sauté everything well until everything hits up.
Once all the vegetables start to heat, add half a tablespoon of turmeric powder and sauté well until the raw smell of the turmeric powder goes away.
Add more coconut oil if required for the turmeric powder to fry.
At this stage, mash and feel one large potato and add it to the curry along with some boiling hot water for the gravy. I have added three by four of a large mug of water, you may adjust the quantity of water according to the consistency you need.
After adding the water, bring it to a rolling boil and add some salt to taste.
Finally let’s add a secret ingredient which is responsible for thickening up the gravy a bit..
In a small separate bowl, combine a tablespoon of plain flour and add very little water to it and mix well to form a lump free solution.
Add this plain flour solution into the curry and start mixing well immediately and you can see the gravy starting to thicken up..
Once the gravy is ready, add some chopped coriander leaves and give everything a good mix and turn off the flame.
Your curry will turn a little thicker with time, so do not make it too thick before turning off the flame.
Once ready, transfer it into a serving plate and enjoy!!
