Ingredients:
Raw rice / Pachari / Sona Masoori rice – 250g / 1 cup (Soaked for 2 hrs)
Grated coconut – ¼ of a small one / 2 handfuls / 5 tbsp
Cooked rice – 4 tbsp
Sugar – 1 tsp
Salt
Steps:
Grind soaked rice, grated coconut, cooked rice and sugar to a smooth paste adding enough water. Use coconut water, if possible.
Cover and keep the batter aside in a warm spot overnight for fermentation.
The batter doesn’t rise, but will become soft.
Once the batter is fermented, add salt.
Appam can be made like palappam in appa chatti or as vellayappam in dosa pan.
I am making like vellayappam.
Heat a pan and pour a ladle of the batter.
Spread gently.
Once the holes appear on the appam, lower the flame.
Cover and cook till the appam is done.
Enjoy with potato stew or fish molee or chicken stew or egg roast or kadala curry or with sweetened milk or coconut milk.
