TOMATO CURRY

Tomato – 3

Onion – 2

Ginger – One big piece

Green chilli – as per taste

Curry leaves

Grated coconut – ½ of ine coconut

Coconut oil – 1 tbsp

Vinegar – 1 ½ tbsp

Cumin seeds – ¼ tbsp

Turmeric powder – ½ tbsp + 2 pinches

Chilly powder – ¼ tbsp

Salt – to taste

Mustard seeds – ½ tbsp

Fenugreek seeds – ¼ tsp

Dried Red chilli

Shallot – 1

Hi everyone, today I am here with NEC tomato curry recipe..

To prepare the curry, first we need to add all the ingredients into a saucepan.

Firstly, add two thinly sliced onions, crushed ginger, curry leaves, tomatoes cut into chunks (Cut want tomato into eight pieces), half a tablespoon of turmeric powder, a quarter tablespoon of chilli powder some salt to taste, a few slit green chilies as per your taste, a tablespoon of coconut oil and one and half tablespoon of vinegar and mix everything really well with your hands and squeeze well so that everything releases the juices and mix well..

After everything is quashed, leave it to rest for around 10 minutes.

Next, grind 1 ¾ hand full of coconut along with a quarter tablespoon of cumin seeds in a mixer grinder along with very little water so that the coconut grinds smoothly..

Once the coconut is groud into a buttery paste, add it to the marinated tomatoes along with some water as required, and mix everything well..

Add enough water for the gravy as well..

Once everything is mixed, place it on the stove and turn on the heat and bring everything to a boil, with the lid closed.

Once the curry comes to a boil, give it a good mix and let it simmer for another 5 mins while the tempering is being prepared..

To temper the curry, heat some coconut oil in a small pan and add half a tablespoon of mustard seeds and let it splutter..

Next, add a few dried red chilies along with one finely chopped Shallot and roast until the shallot turns golden brown..

Next, add 1/4 tsp of fenugreek seeds and fry in the oil

Once it has turned golden brown, add two pinches of turmeric powder and roast until it turns fragrant..

Once the tempering is ready, add it hot to the curry and serve!!
