FILLING
Red rice – 1 cup
Grated coconut – 1 handful
Jaggery – 125g OR sugar
Robustas banana – ¾
Cardamom powder – to taste
COATING
Rice flour – 1 cup
Boiling hot water – 1 cup
Salt – to taste
Coconut oil – 2 tbsp
Oil – to shallow fry
Hi everyone, today I am here with the recipe of a sweet traditional, yet easy snack..
To prepare the snacks, first wash a cup of red rice and get rid of the excess water using a paper towel, or a kitchen cloth or using a strainer.
When the rice is washed and dried, add to a pan and keep roasting it on a medium to low flame until all the grains pop and the rice turn brown and aromatic.
Once done, transfer it into another plate and let it cool down completely before grinding it into fine powder in the jar of a mixer grinder.
After grinding the rice to a fine powder, transfer it into a mixing bowl or plate and add a handful of grated coconut, some sugar and cardamom powder as per your taste and three by fourth of a robusta banana.
You can also use jaggery instead of sugar for this recipe.. if you are using jaggery, add only 2 to 3 tablespoons of water and melt it before adding to the mixture, do not add too much water and make it runny.
After adding all the ingredients to the mixing bowl, mash the banana really well using your hands and then prepare the dough that is stiff and soft.
I powdered my cardamom pods along with the sugar for flavour.
When the mixing is ready, it’s time to prepare the outer layer of the snack.
For that, add a cup of rice flour and a cup of boiling hot water into a mixing bowl along with some salt to taste.
Mix everything well together and knead it into a smooth dough and then add 2 tablespoons of coconut oil or ghee or butter for the extra smoothness and taste.
When the dough is ready, separate small chunks from the dough and then spread it out into thin round circles in your palms, using your fingers and then place a huge chunk of the prepared filling in the middle of the coating and close it entirely using the coating.
After covering the filling with the coating, smooth it out with your fingers and your palms to give it a good shape of your choice, with a smooth finish.
After these are ready, you can either steam them like you normally would make kozhikatta or you can shallow fry them in the oil..
Today, I am going to hit a little oil in a pan and I’m going to shallow fry these on all the sides until they turn golden and crisp..
Once done, remove from oil and serve!!
