LADIES FINGER CURRY
Ladies finger –
Tamarind – a medium piece
Onion – ½ + a little, finely chopped
Green chilli – as per taste
Ginger – 1 big piece
Turmeric powder – ¼ tbsp + ¼ tbsp
Grated coconut – 1 ½ handful +1 handful
Curry leaves
Whole coriander seeds – 2 tbsp
Fennel seeds – ½ tbsp
Peppercorns – 10 nos
Fenugreek seeds – 2 pinches
Shallot – 1
Chilly powder – ¾ tbsp
Cumin seeds – 1 pinch
Coconut oil
Mustard seeds – ½ tsp
Dried red chillies – to season the curry
Hi everyone, today I am here with a Naadan vendakkaya curry..
First, leave a medium sized piece of tamarind in some warm water and set it aside.
To prepare the curry, first, cut your ladies fingers into 2 inch size pieces and add it to a pan..
Next, into the pan, add half of a thinly sliced onion, a medium piece of ginger, finely cut and a few green chilies slit in the middle.. We would be adding more green chilies to this curry and less chilli powder to get a yellowish colour..
Next, add ¼ tablespoon of turmeric powder and some coconut oil to sauté everything on a medium flame..
After leaving the ladies finger to sauté, in another pan, dry roast 2 tablespoons of whole coriander seeds, half a tablespoon of fennel seeds, 10 peppercorns and two pinches of fenugreek seeds. . After the dry spices have sautéed, add one and half handfuls of grated coconut and one shallot and start roasting again..
Next, add ¾ tablespoon of chilli powder or as per your taste and sauté everything on a very low flame so that nothing burns..
if you do not have whole coriander seeds, you may use 1 tbsp of coriander powder in the final stage, right before adding the chilli powder..
Once the grated coconut mixture is ready, grind it in the mixer grinder along with very little water so that you get a smooth and fine paste..
Once the roasted coconut paste is ready, prepare fresh coconut paste by grinding a handful of grated coconut and a pinch of cumin seeds in another mixer grinder jar and keep it aside as well..
By the time you prepare the coconut paste, your ladies finger will be sautéed and ready. . To the sautéed ladies finger, add the squeezed juice of a medium-sized ball of tamarind which has soaked in warm water and mix well, on a medium flame..
Once everything in the pan heats up, add the fried coconut paste along with a little water, turn the flame to high and taste the curry for salt.
Once the curry comes to a boil, add our freshly grated coconut paste along with a little more water and bring it to a boil..
At this point, taste the curry and add more tamarind water if required. .
Next, to season the curry, heat some coconut oil in a small pan and add ½ tsp mustard seeds and let it splutter.. Next, add a few pieces of dried red chilli and finely chopped onion or shallot, along with some curry leaves and a pinch of turmeric powder..
Add the seasoning to the curry and give it a good mix and close the pan for at least a minute so that all the aroma gets locked in..
The curry is ready to be served!!
