Marinate
Ladies finger- 200g
Salt – to taste
Pepper powder – ¼ tbsp
Turmeric powder – ¼ tsp
Chilli powder – ¼ tbp
Lime juice – ½ of a lemon
Masala
Ginger – 1 medium piece
Garlic – 5 big cloves
Green chilli – as per taste
Onion – ½ onion
Curry leaves
Turmeric powder – ¼ tsp
Coriander powder – ½ tbsp
Chilly powder – As per taste
Tomato – 1
Salt
Egg – 4
Garam masala – as per taste

Hi everyone, today I am here with a different kind of egg curry with ladies finger in it..
For the first step, marinate 200g of round cut ladies finger with some salt, a quarter tablespoon of pepper powder, a quarter teaspoon of turmeric powder, a quarter tablespoon of chilli powder and the juice of half a line and let it rest for at least 10 minutes..
After 10 minutes, shallow fry the ladies finger in a pan using some oil, until it cooks through and turns lil crispy.. transfer to another place from the pan.
Next, to prepare masala, add a little more oil into the same pan and add five finely chopped cloves of garlic, a medium piece of finely cut ginger, a few curry leaves and sauté..
When the ginger and garlic turns golden brown, add half of a finely chopped onion and a few more curry leaves..
When the onions turn soft, keep the flame low and add the masala powders.
First add a quarter teaspoon of turmeric powder and sauté until it’s raw smell is gone.
Next, add a tablespoon of coriander powder and sauté until its raw smell is gone away as well.. third, add some chilli powder as per your taste and sauté on a very low flame until the raw smell goes away..
At this stage, finely chop a tomato and added to this masala along with some salt and close it with a lid so that the tomatoes can cook well I am turn mushy.
After few minutes, the tomatoes will turn mushy, and then keep the lid open and keep stirring on a medium flame until the masala becomes very dry. At this stage, taste the curry and add garam masala if required.
When the masala is also ready, beat two eggs with some salt and pepper in a small bowl and set it aside.
Heat a pan and add some coconut oil and then add half of the beaten eggs on to the pain and wait for a few seconds until the base of the egg is cooked.
Once the base looks done, add a layer of the prepared masala, followed by the fried ladies finger and then followed by the remaining masala and then the remaining beaten egg..
you may also add a few coriander leaves in between.
After layering the omelette, close it with a lid so that it can cook through without burning the bottom.. make sure to cook on the lowest flame possible.
Once it’s golden and brown on the bottom side, flip and cook on the top side as well and the dishes ready to be served..!!
