വഴുതനങ്ങ കറി ( Brinjal Curry Kerala Recipe ) EPISODE:96

Ingredients:
Brinjal – 7-9 small
Onion – 1 (Chopped)
Tomato – 2 (Chopped)
Turmeric powder – ½ tsp
Chilly powder – 1 tbsp
Coriander powder – 1 tbsp
Ginger garlic paste – 2 tbsp
Grated coconut – 3 tbsp
Tamarind juice -¾ glass
Mustard seeds – ½ tsp
Fenugreek – ¼ tsp
Urad Dal – ½ tsp
Curry leaves
Dry chillies
Jaggery – a small piece
Oil
Salt
Steps:
Make deep slits in the brinjal without disturbing the top part.
Heat oil in a pan and shallow fry the brinjals.
Transfer to a plate and set aside.
Add some more oil to the pan, if required.
Add onion and some salt.
Once the onion becomes soft, lower the flame and add turmeric powder. Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add ginger garlic paste and mix well.
Add tomato.
Add grated coconut and mix well.
Cover and cook on medium flame till tomatoes are done and oil separates.
Switch off and let it cool.
Grind the masala to a smooth paste.
Heat oil in a pan and add mustard seeds. Let it splutter.
Add fenugreek, urad dal, curry leaves and dry chillies.
Add a pinch of chilly powder.
Add the coconut paste and some water.
Add tamarind juice. Check taste and add salt, if needed.
Add jaggery and brinjal. Mix well.
Cover and cook for 10 moil separates.
Serve with rice or chappathi.
