വറുത്തു അരച്ച നാടൻ മുട്ട കറി | Varutharacha Mutta Curry |Egg Curry

Description :

Ingredients :
Eggs (Hard boiled and deshelled) – 7
Onion – 2 medium (Finely sliced)
Ginger – 1 medium
Garlic – 5 fat cloves
Turmeric powder – ¼ tsp
Garam masala – 1 tsp
Bay leaf – 2
Tomato – 1 big
Salt

To roast and grind:
Grated coconut – ¼ of a coconut / 8 tbsp
Curry leaves
Fennel seeds – 1 tbsp
Turmeric powder – 1 tsp
Coriander powder – 2 tbsp
Red chilly powder – 1½ tbsp

Steps:
Heat oil in a pan to roast coconut.
Add coconut and roast on medium flame.
Add curry leaves.
When the coconut becomes hot, add fennel seeds.
Once the coconut starts to turn golden, lower the flame and add turmeric powder.
When the raw smell goes away, add coriander powder and red chilly powder.
Saute till the raw smell is gone. Switch off and transfer it to a plate.

Heat oil and add onion, garlic and ginger.
When the onion becomes soft, add turmeric powder and garam masala.
Saute until the onion turns golden.
Add tomato and salt.
Cover and cook on medium flame till the tomatoes are done.
Switch off.

Pulse the roasted coconut a few times.
Add the onion-tomato masala also to the mixie jar and grind to a smooth paste.
Transfer it back to the pan.
Add enough water for the gravy.
Add bay leaf and salt.
Turn on the heat.
Cover and bring it to a boil.
Add eggs. Cover and cook on medium-low flame till oil separates.
Serve hot and enjoy with rice, chapathi or kuboos.
