രുചികരമായ മീൻ അച്ചാർ ||How To Make Kerala Fish Pickle
Description :
Ingredients:
Fish – 1 kg (Cut into thin pieces)
Turmeric powder – 1½ tsp
Red chilly powder – 1 tbsp
Salt
Fenugreek – 1 tbsp
Ginger – 2 big piece (Crushed)
Garlic – 2 bulbs (Crushed)
Mustard seeds – 1½ tsp
Dry red chilly – 4
Garlic – 8 fat cloves (Chopped)
Green chilly – 6 (Chopped)
Curry leaves
Turmeric powder – 1½ tsp
Red chilly powder – 2½ tbsp
Asafoetida / Hing – 2 tsp
White vinegar – ½ glass
Gingelly oil (Preferred)
Salt
Steps:
Marinate the cleaned fish with salt, turmeric powder and chilly powder.
Let it rest for 30 minutes.
(You may also marinate the fish on the previous day and refrigerate.)
Heat a pan and dry roast the fenugreek till golden brown.
Remove. Finely powder and set aside.
Coarsely crush the ginger and garlic without adding water.
Heat oil in a pan and deep fry the fish.
Flip and fry both sides.
Remove and set aside.
Heat gingelly oil in a pan and add some mustard seeds.
Let it splutter.
Add dry red chilly.
Add crushed ginger and garlic, chopped garlic, green chilly and curry leaves.
Once it becomes dry, lower the flame and add turmeric powder.
Sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add the fenugreek powder and hing.
Add vinegar and bring it to a boil.
Add fried fish and salt.
Adjust the flavors and switch off.
Once cool, transfer to a glass or steel jar.
Store the pickle without refrigeration for a week and then in the fridge.
Use more oil, if you want to store it longer.
Enjoy the fish pickle.
Tips:
-Any fish with thick flesh can be used. I used seer fish / neymeen.
-Leave the fish in the freezer until it becomes hard before cutting the fish. This helps to cut them into thin pieces without breaking.
-If you are preparing the pickle in iron, aluminum or hindalium pan, transfer the pickle immediately to a glass or steel jar after preparation.
-Use a dry spoon to serve the pickle.
