Egg – 3 or as needed
Tomato – 1 big
Onion – 1 big
Curry leaves
Garlic – 7-8 cloves
Green chilly – as per taste
Ginger – 1 big piece
Grated Coconut – 3 tbsp
Cus cus – 1 tsp soaked in hot water for 30 mins
Turmeric powder – ½ tbsp
Chilli powder – ½ tbsp or as per taste
Fennel seeds powder – made from 1 tsp fennel seeds
Garam masala – as per taste

Hi everyone, today I am here with a simple and delicious egg curry recipe..
First, into the smallest out of a mixer grinder, add a few close of garlic, 3 to 4 tablespoons of grated coconut, a teaspoon of salt cuscus, a big piece of ginger and a few green chilies to test and grind it into a very fine paste by adding a little water and salt to it.
When the paste is ready, set it aside and in another mixer grinder, grind one big tomato and keep it aside as well.
Next, heat some oil in a pan and sauté finely chopped onion along with some curry leaves until the onion changes colour to golden brown.
When the onion has started to change colour, add half a tablespoon of turmeric powder and sauté until its raw smell is gone.
Next, add a tablespoon of coriander powder and sauté until its raw smell is gone as well..keep the flame at the lowest while adding the masala powders so that they do not burn.
Next, add some chilli powder as per your taste preference and sauté until its raw smell is gone as well.
Once that is done, add the prepared paste and the ground tomato along with some water needed for the gravy..
after you have added the tomato paste and water, add some salt to taste and keep the flame to medium and let it cook with the lid closed for around 10 minutes or until the gravy loses its raw smell and taste.
Meanwhile, dry roast a teaspoon of fennel seeds and grind it into a fine powder using a mortar and pestle. The freshly ground fennel seed powder will give a very good flavour and taste to the curry.
At this point, add some garam masala to taste.
Next, keep the flame to the lowest and let it cook for another 10 minutes.
Next, break in as many eggs as you want into the curry directly and close it with the lid for another 3 to 4 minutes until the eggs cook through..
Do not mix immediately after adding the eggs, make sure that is completely cooked before you stir the curry.
Once done, you may garnish the curry with some coriander leaves and serve..!!
