Green peas
Garlic – a few cloves
Curry leaves
Chickpea flour – 1 cup
Corn flour – 4 tbsp
Chilly powder – 2 tbsp or as per taste
Salt – to taste
Oil – to fry
Hi everyone, today I am here with a crispy green peas fry snack recipe. .
To prepare these, soak green peas in water overnight or until it turns a little soft to touch.
Once the green peas turn soft, it’s time to boil them in a pressure cooker, in a different way.
Transfer the soaked green peas into another bowl and discard the water that was used to soak. Place this bowl inside the pressure cooker which contains water, of course, and then close the pressure cooker and cook it for one whistle .
Make sure that you turn off the flame after the first whistle, else the green peas will overcook and that’s not what we are looking for.
The green peas should be only soft to bite, not overcooked.
Once the green peas are cooked, let it cool down while we prepare the masala coating for the green peas.
To prepare the masala coating, into a large mixing bowl, add a cup of chickpea flour along with 4 tablespoons of corn flour, enough chili powder and salt to taste, and mix it really well into a thick batter using enough water
You should get a thick batter as you can see in the video. If your batter turns out to be too runny, add enough chickpea flour to tighten the batter .
Once the batter is ready, transfer the cooked green peas into the batter and discard any water that might be present in the bowl of the green peas..
Do not add any excess water other than what is required.
Next, mix the peas really well with the better until all the green peas get a nice and thick coating with the masala .
At this point, if you feel that a masala is too thin and does not stick to the green peas, you may feel free to add a little more chickpea flour to tighten the batter so that it adheres better to the green peas . The green color of the peas will be seen through, but it doesn’t matter.
Once everything is ready, heat some oil in a pan and add the green peas into hot oil and fry it until crispy, on a medium to low flame.
You can add the green peas one by one into the oil or you can add it as a group of three or four green peas.. The choice is yours.
Once it’s ready, take it out from the oil, on to a paper towel.
At last, I am going to fry a few cloves of crushed garlic along with some curry leaves for flavour, and mix it with the fried green peas.
With this, our crispy green peas fry is now ready to be served!!
Make sure to not fry this on a high flame, else the coating will burn and the inside will remain soft. Fry these on a medium to low low flame so that the peas inside the masala turn crunchy and the masala cook perfectly crunchy from the outside.
