ബീഫ് ഇല്ലാത്ത ബീഫ് കറി നോമ്പ് സ്പെഷ്യൽ || Soya Chunks Curry

Description :

Ingredients:
Soya chunks – 100g (No need to soak)
Coconut slices – 2 handfuls
Onion – ½ of a medium (Thinly sliced)
Ginger – 1 big piece (Crushed)
Garlic – 5 fat cloves (Crushed)
Curry leaves
Tomato – 1 (Chopped)
Salt
Oil

To roast and grind:
Grated coconut – ¾ glass
Cinnamon – 1 small piece
Star anise – 1
Pepper – 1 tsp
Fennel seeds – 1½ tsp
Turmeric powder – 1 tsp
Coriander powder – 1¼ tbsp / Coriander seeds – 2 tbsp
Red chilly powder – 1½ tbsp
Shallots
Curry leaves

Steps:
Heat a heavy bottomed pan and add cinnamon, star anise, fennel seeds and pepper.
If you are using coriander seeds and dry red chilly instead of powders, add that also now.
Once it heats up, add grated coconut.
Add coconut oil to roast the coconut.
Add curry leaves and shallots.
Roast till golden on medium flame.
When it starts to turn golden, add turmeric powder. Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Switch off and transfer it to a plate to cool down.
Once cool, pulse a few times without adding water.
Then add water and grind it to a fine paste.

Heat oil in a pan.
Add onion, ginger, garlic and curry leaves.
When the onion becomes soft, lower the flame and coconut paste, some water, tomato, washed soya chunks, coconut bits and salt.
Cover and bring it to a boil on high flame.
Then cook on medium flame for 20 minutes.
I am adding 1 tsp vinegar also because the tomatoes I have added is less sour.
Switch off.
Serve it with chapathi or rice.
