Boneless chicken – 200g

Hi everyone, today let’s make an easy and crispy chicken sandwich with a delicious filling.
First, boil 200 g of boneless chicken with some salt and pepper in a saucepan without adding any extra water to cook. Once the chicken is cooked, make sure that all the water is dried up and then blend the chicken quickly in the mixer grinder just crush the chicken.
Next, let’s prepare bread pockets for the bread sandwich. For that, I have beaten two eggs in a small bowl and seasoned it with some salt and pepper to taste.
Next, cut the sides of the bread and save it to prepare breadcrumbs..
To prepare the bread pockets, take two slices of bread and dip it in the beaten eggs and then roll it completely in the breadcrumbs and deep fry it in oil.
Make sure that you fry the bread until golden on all the sides, on high flame, in the oil.
Make sure that both the slices of bread are completely covered by the egg wash, else it will separate into slices when frying in oil.
Next, prepare some mayonnaise in a mixer grinder by blending in one egg, 1 teaspoon of vinegar, some salt to taste and enough oil to get it into a thick consistency of mayonnaise. If you like the flavour of garlic, you can add in a clove of garlic too..
You can easily prepare the mayonnaise at home like this, or you can use store bought mayonnaise for this recipe.
Coming back to the filling, transfer the crushed chicken into a large bowl and mix some finely chopped capsicum, finely chopped onion, finely chopped green chilli, finely chopped tomato without the seeds, and some salad mix. Next, add enough of the prepared mayonnaise and mix it really well.. season it with some pepper to taste. You can add any vegetables of your choice, which can be eaten raw, to the filling, because we won’t be cooking this further.
Once the filling is ready, cut the bread pocket diagonally and fill each pocket with a generous amount of the filling that we just made and that’s it.. your delicious crispy chicken sandwich is now ready to be served..
