SPICY WHEAT DIAMOND CUTS
Garlic – 3 big cloves
Dried red chillies – 5 nos
Wheat flour – 1 cup
Plain flour- 1 cup
Asafoetida powder – ¼ tsp
Cumin seeds – a little
Ghee – 3 tbsp
Curry leaves
Oil – to fry
Salt – to taste
Hi everyone, today let’s make a crispy and spicy diamond cut recipe using wheat flour.
To prepare the spicy snack, a mixer grinder, add three large cloves of garlic along with five dried whole red chilies and grind it into a smooth paste by adding a little water..
If you do not have whole dried red chilies, you may add half a tablespoon or so of chilli powder, according to your taste.
Next, into a large mixing bowl add a cup of wheat flour and a cup of plain flour and season it with some salt to taste.
Do not add a lot of salt at this point, you can taste the dough later ,and add more salt; if required.
You may use regular drinking glasses to measure the flour if you do not have a measuring cup..
Add ¼ teaspoon of asafoetida powder and a little cumin seeds to the flour and and mix well.. add crushed carom seeds, if available for an added fragrance and flavour..
Next, add 3 tablespoons full of ghee into the flour mixture and incorporate the ghee really well with the flour..Do not reduce the quantity of ghee..You may use butter as well. If you do not have either, use normal cooking oil, in the same quantity, which is 3 tbsp.
Next, add the chilli garlic paste and a few chopped curry leaves..
Mix everything well and add little by little water and knead it into a nice dough.
After kneading the dough, let it rest for about 10 to 15 minutes, closed.
Next, separate a huge chunk from the dough, or even separate half of the dough and knead it again and roll it out thinly on flour dusted surface so that it doesn’t stick..
After rolling it out thinly, cut it into small diamond-like shapes as you can see in the video.. make sure to dust it before you cut, else it will stick to each other..
once the diamonds are cut and ready, you may fry them in oil..
Make sure that the oil is really hot when you add it, then lower the flame to medium to low while it’s cooking from within..
Make sure to lower the flame when the snack bubbles up in oil.
Fry the diamond cuts in oil until crispy and lightly golden, remove from the oil and serve!
