BROKEN WHEAT DOSA

Broken wheat – 1 glass
Wheat flour – ½ glass
Cabbage – a handful
Carrot – a little lesser than cabbage
Onion
Green chilli
Boiled Eggs
Cumin seeds – ½ tsp
Oil

To make this yummy and healthy breakfast, first dry roast a glass of broken wheat in a pan until the grains start to pop..
If your broken wheat is not washed, then wash it and dry it in the sun before use.. you can use big or small granuled broken wheat.
After the grains pop and turn fragrant, leave it to cool down and powder it in a mixer grinder in batches and transfer it a mixing bowl.
To the broken wheat flour, add half a glass of whole wheat flour along with half teaspoon of cumin seeds and salt.
You may skip adding cumin seeds if you do not like its taste..You can also add grated coconut if you wish to.
To this mixture, add the finely chopped vegetables, which are finely chopped carrot, finely chopped onion, finely chopped cabbage and finely chopped green chilies to taste..
Add some salt to taste and enough water to make this into a thick batter..
After adding the water, let it rest for around 30 minutes.. after 30 minutes, the batter will turn thicker as the flour will absorb and soak in the water..At that stage, you may add more water to adjust consistency of the batter..
Taste better and add more salt, if required
After about 30 minutes the batter will be thick and ready.. The batter should be a little thicker than Dosa batter.

To prepare this healthy Dosa, prepare an iron pan by drizzling some oil and sprinkling some
chilli flakes..
Meanwhile, apply a little salt on half of a boiled egg and place it on the centre of the pan, with the cut side down.
After placing the egg, pour the batter on all sides of the egg as shown in the video..
Now, lower the flame and keep it closed so that it can cook through
This Dosa will take a little long to cook, so keep the lid closed at all the times on a low flame, until it cooks through.

When one side is cooked, flip and cook on the other side with the lid closed.
For vegetarians, or for those who do not Prefer to add egg, take a nonstick pan and grease it with some oil and add little batter and spread it into small Dosa and cook it with a lid closed, on low flame.
When both sides of the appam/dosa is cooked and golden, take out from the pan to a serving plate..

A few things to take care of is that the batter should not be too runny nor too thick, it should be cooked with the lid closed at all times and also make sure to add a generous amount of oil if you like it golden and crisp on the sides..

You can also skip adding vegetables and have it with Chutney as a normal Dosa.
