PARIPPUVADA
Dal – (chana dal or yellow split peas) – 2 glass / 450g
Onion – 1 ½ big
Ginger – 1 big piece, crushed
Green chilli – as per taste
Dried red chillies – as needed
Salt – as needed
Curry leaves
Oil – to fry

Hi everyone, today I am here with a crispy Parippuvada recipe..

To prepare these, soak 450 g of chana dal or yellow split peas in water for around 3 to 4 hours or until they break when you press with your fingernails…

Once the dal is soaked, transfer it into a mixer grinder in batches and grind it into a crumbly paste.. It is okay if some dal remains as such..

Next, into the ground dal, add one and half finely chopped big onion, a big piece of ginger, crushed, a few green chillies, finely chopped, a few curry leaves, some salt as needed and a few dried red chilies, cut into small pieces..

After adding all these ingredients, mix everything really well with your hands until all the ingredients are blended in together really well.. once blended, check the mixture for salt and add more salt if required..

Once the batter is ready, separate small chunks from the batter and shape it into round parippuvadas by making a little dip in the centre so that they fry through really well.

If the edges remain untidy, it is totally fine because those untidy edges will provide space for the oil to get in and fry really well and to make the parippuvadas really crispy..

Once they are shaped, gently drop it into hot oil and fry these for around 14 to 15 minutes on a medium to low flame or until fully crispy. .

Once they change colour on one side, flip it over and cook on the other side as well..

Once golden, remove from the oil and serve..
