Ingredients:
For chapathi:
Wheat flour – 2½ cup
Salt
Lukewarm water
For mutton curry:
Mutton – 1½ kg (Cut into medium pieces)
Onion – 2 big (Thinly sliced)
Ginger – 1 small +1 big piece
Garlic – 18 fat cloves
Green chilly – 2+3
Turmeric powder – ½ tbsp + ½ tbsp
Pepper powder – ½ tbsp
Curry leaves
Coriander powder – 2 tbsp
Red chilly powder – 2 tbsp
Tomato – 2 big (Chopped)
Coriander leaves
For garam masala:
Fennel seeds – 2 tbsp
Star anise – 2
Cloves – ½ tbsp
Cinnamon – 1 big
For salad
Cucumber – 1
Onion – 2 small
Tomato – 1 big
Lime – 1
Avocado – 1
Olive oil
Steps:
Make a soft dough of wheat flour adding salt with lukewarm water. Cover and let it rest.
Make a paste of 1 big piece of ginger and garlic.
Heat whole spices and grind to make garam masala powder.
Add mutton along with 1 small crushed ginger, 2 green chilly, one handful sliced onion, salt, ½ tbsp turmeric powder, ½ tbsp pepper powder, curry leaves and 1½ cup water into a pressure cooker and cook for 1 whistle on high flame. Let the pressure release naturally.
Heat oil in a pan and add onion and 3 green chillies.
Once the onion starts to turn golden, add ginger garlic paste.
Once the raw smell of ginger and garlic is gone, reduce the flame and add ½ tbsp turmeric powder, 2 tbsp coriander powder and 2 tbsp red chilly powder.
When the raw smell of masala powders is gone, add tomato, salt and ¼ glass water.
Add half of the ground garam masala. Cover and cook on medium flame till the tomato is done.
Add cooked mutton along with gravy to the masala.
Add coriander leaves. Cover and cook.
Add the remaining garam masala and cook till mutton is cooked and gravy thickens.
Switch off and garnish with coriander leaves.
To make chapathy, roll out medium size balls to thin discs.
Heat a pan and cook both sides of the discs.
For salad, add some salt to finely chop onion and mix well applying some pressure.
Squeeze out the water.
Add finely chopped cucumber, tomato, avocado, green chilly, lime juice and olive oil and mix well.
