Description :

Cauliflower – 1 big, whole

Turmeric powder – ¼ tsp for masala, a little for soaking

Ginger & Garlic for ginger garlic paste

Green chilly

Chilly flakes

Onion – ½ of one

Curry leaves

Corn flour – as needed

Soya sauce – 4 tbsp

Chilly sauce – 4 tbsp

Tomato ketchup/sauce – 3 tbsp

Vinegar – 3 tbsp

Pepper powder

Sugar

Salt

Oil

BATTER
________

Maida – ½ cup

Rice flour – ¼ cup

Corn flour – 1 cup

Turmeric powder / ¼ tsp

Chilly powder – 1 tbsp

Salt

Water

Hi everyone, today I am here with a tasty cauliflower fry masala recipe..

First, cut a large cauliflower into small florets and then wash it well under tap water and then add it into a bowl of boiling hot water along with some salt and turmeric powder, to turn a little soft. Soak the cauliflower in boiling hot water for only around 4 to 5 minutes, and not more than that.

After around five minutes, drain off the excess water from the cauliflower and coat the cauliflower with a couple tablespoons of corn flour..
You can directly add the con floor on top of the cauliflower and toss it in the same bowl to coat it..

Next, finely chopped ginger and garlic and then set aside. You may use a few cloves of garlic and a small piece of ginger.

Next, prepare the batter by adding half a cup of plain flour, a cup of corn flour, a quarter cup of rice flour, some salt to taste, a tablespoon of chilli powder or as per your taste and a quarter teaspoon of turmeric powder and add enough water to make it into a smooth and lump free paste which is neither too thick, nor too thin.

When the battery is ready, dip the cauliflower florets one by one into the matter and deep fry until golden brown and crispy on the outside and cooked from the inside..
When the cauliflower turns brown and crispy, remove it from the oil and set aside.

Next, into the same oil used to fry the cauliflower, add finely chopped ginger and garlic, A couple of green chilies and sauté well until golden brown, followed by half of a finely chopped onion.
You may remove the excess oil if there is too much left after frying the cauliflower.

Once the onions turn soft, add a little turmeric powder and some chilli flakes to taste and sauté until the raw smell goes away..

Next, turn the flame to the highest and add 4 tablespoons of chilli sauce, 3 tablespoons of tomato sauce or tomato ketchup, 4 tablespoons of soya sauce, 3 tablespoons of vinegar, some pepper powder to taste and some sugar to taste and mix everything well to form a thick sauce..

Next, add the fried cauliflower into the sauce and mix everything really well and you may also sprinkle a few curry leaves to finish it off..

Once done, transfer into a serving plate..!
