Ingredients:
Puttu powder / Rice flour – 1 cup
Cooked rice (any variety) – 1 cup (This varies if the rice is overcooked / undercooked)
Shallot – Quarter of a big one (Optional)
Cumin seeds – To taste (Optional)
Salt
Grated coconut
Method:
Optionally, dry roast the store brought rice flour.
Whip equal portions of rice flour and cooked rice along with sliced shallots, cumin seeds and salt in a mixie. If you are using a larger quantity, whip in batches.
When you press the coarse and moist mixture between your fingers, it should hold its shape and should crumble back when pressed further. That’s the right consistency.
Take the puttu maker/mould and add a little (1-2 tbsp) grated coconut with a spoon and then add a few spoons of the prepared mixture followed by a layer of coconut.
Repeat the same steps until the puttu maker is loosely full.
Now add 2-3 cups of water in a pressure cooker, cover the cooker and remove the whistle.
Place the puttu maker on the vent pipe at the top of cooker and steam it on high flame.
When the steam starts coming out of the puttu maker, do not switch off immediately. Wait for another 2-3 minutes for the puttu to get cooked completely.
Switch off the stove. Transfer the soft puttu to a plate and enjoy.
