Description :
Ingredients:
Cooked rice – 2 cup
Curd / Yogurt – 2 tbsp
Onion – 1 medium
Green chilly
Ginger – 1 medium piece
Coriander leaves – 1 handful
Rice flour – 5 tbsp or as required (Roasted or unroasted)
Crushed pepper – 1/2 tsp
Fennel seeds – A pinch (Optional)
Asafoetida / Hing
Water
Salt
Steps:
Grind cooked rice and curd to a smooth paste adding some water to a thick paste.
Add thinly sliced onion, green chilly, ginger, coriander leaves, rice flour, salt, crushed pepper, fennel seeds and asafoetida to the ground mixture.
Mix well with your hands for 5 minutes.
Let it rest for minimum 1 hour.
Heat oil in a pan to deep fry.
Wet your palm with water. Take a small portion of the mixture and shape it to a circle in your palm.
Make a hole in the center using the index finger.
Slide it into the hot oil and fry till crispy.
Enjoy the soft and crispy rice vada.
