ചോറുകൊണ്ട് കട്‌ലറ്റ് ||ബാക്കി വരുന്ന ചോറുകൊണ്ട് കൊതിയൂറും കട്‌ലറ്റ്|| left over rice cutlet

Description :

Ingredients:
Cooked rice – 2 cups (Any variety)
Boiled potato – 1 medium
Carrot – Two handfuls (Grated)
Cabbage – Two handfuls (Cut into thin strips)
Frozen green peas
Onion – 1 medium
Ginger – 1 big piece (crushed)
Green chilly
Coriander leaves
Curry leaves (Optional)
Garam masala – ½ tbsp
Red chilly powder – ¼ tsp
Turmeric powder – 2 pinches
Tamarind extract – 1 tbsp
Salt
Oil

For the coating
Eggs – 2 OR Cornstarch mixed with water
Pepper powder
Breadcrumbs

Steps:
Grind rice as a thick paste without adding water. Set aside.

Heat oil in a pan. Add finely chopped onion, crushed ginger and green chillies and saute till the onion becomes translucent.
Add two pinches of turmeric and red chilly powder and saute.
Add cabbage, carrot, green peas, coriander leaves and salt and mix well. Cook without covering. Do not add water.
Add garam masala and tamarind extract.
Switch off and set aside.

Add boiled and mashed potato to the rice paste.
Add the vegetable masala and mix well. Add salt.
Shape it into circles or the shape of your choice.
Break in two eggs and add some pepper powder. You can also make a paste of cornstarch adding some water.

Heat oil in a pan for deep frying.
Dip the shaped cutlet in egg and coat both sides with breadcrumbs.
Slide them into the hot oil. When it starts to brown, reduce the flame to medium.
Flip and fry both sides.
Serve hot and enjoy your hot and soft cutlet with ketchup.
