Ginger – 1 small piece
Garlic – 2 big cloves
Curry leaves
Cumin seeds – ¼ tsp
Chilli flakes / green chilli – as per taste
Rice flour – 1 cup
Cheruparipp – 3 tbsp (soaked for an hour)
Salt – to taste
Ajwain – 2 pinches
Oil – 2 tbsp + to fry
Hi everyone, today I am going to make a very crispy and tasty evening snack which can be stored for a long time.
To prepare the mix, first grind a small piece of ginger, to close of garlic and a few curry leaves or coriander leaves in the smallest out of a mixer grinder transfer into a mixing bowl.
Next, add a quarter teaspoon of cumin seeds, some chilli flakes to taste, a cup of rice flour, two pinches of ajwain and some salt to taste.
Next, add 3 tablespoons of cheruparipp which has been soaked in water for around an hour.
You need not grind the cheruparipp in the mixer grinder, add it ass hole to the mix.
Please take care to not soak for more than one hour.
After soaking it for an hour, drain off the excess water and then added to the mix.
If you do not have chilli flakes at home, you can grind green chilies along with the ginger and garlic and grind it into a coarse paste. You can add the chilli flakes or the green chilli as per your taste preference.
After all the ingredients have been added to the mixing bowl, makes it really well using your hand and incorporate all the ingredients well..
next, add enough luke warm water and 2 tbsp of oil/butter/ghee and knead it into a tight dough..
The dough should not be sticking to your hands or the bowl.
Once the door is ready, let it rest for around 10 minutes so that all the ingredients get mixed well..
After around 10 minutes, separate the dough into two equal parts and then roll out one part into a very thin sheet and cut the desired shape for the snack.
I am placing cling wrap below and on top of the door so that it is very easy to take the snack after rolling it out..
You can cut it into either diamonds or circles or any other shapes of your choice.
Once they are shaped and ready, deep fry them in hot oil until they turn golden and crispy from all the sides.
You need not keep the flame low while frying this, you can keep the flame moderately high and get them crispy.
Do not wait until all the bubbles disappear from the oil, else they will turn too hard.
Remove them from the oil when they turn golden and the bubbles subside.
You can even store the snack for a few days in an airtight container.
