Description :

Powdered sugar – 1 1/4 cup
Hot Water – 1 cup
Maida – 1 3/4 cup
Raisins – 1 3/4 cup
Baking powder – 1 1/2tsp
Salt – ½ tsp

Sunflower oil OR Butter – ¾ cup

Cinnamon powder – 1 tsp

Nutmeg powder – 1 tsp

Eggs – 2
Jam – 2 tbsp

Oil / butter / ghee – to grease the tin
Hi everyone, today let’s make an easy plum cake for Christmas, at home

To make this cake, you can either use measuring cups or normal drinking glass. If you’re using a normal drinking glass, make sure to use the same glass to measure all the ingredients.

First, add 1 1/2 cup of powdered sugar into a saucepan and let it heat.. once the sugar starts to change colour to brown, swirl the pan around to mix it.. need not use a spoon at this point.

You need not keep the flame at the lowest at this point, it needs a considerable amount of heat to start to caramelise..

Once the sugar is completely melted and caramelised, add a cup of hot water and mix it really well with the water until the caramel melts in the water. Do this step carefully.

Do not wait for the caramel to get to brown and burn, before adding the water.

Once the caramel is completely melted in the water, add ¾ cup of butter or oil, on a high flame..

Once the mixture starts boiling, add 1 ½ cup of raisins and let it boil in the mixture for around five minutes, so that it can soften.

Do not add the nuts into the mixture and boil.. The nuts will be added at a later stage.

If you’re planning to add dates, you can add it later, because dates are already soft..

After boiling it for around five minutes, turn off the flame and let it cool down, while preparing the dry ingredients..

To prepare the dry ingredients, into a large mixing bowl, sift in 1 3/4 cup of Maida, 1 /2 teaspoon of baking powder, half a teaspoon of salt, 1 teaspoon of cinnamon powder and 1 teaspoon of nutmeg powder.

Sift in these ingredients in a large bowl, so that the ingredients don’t spill.

Next, beat In 2 eggs really well in a glass..

Once the raisins caramel solution has cooled down, add in the two beaten eggs and add 3/4 tbsp of vanilla essence, if you like its flavour.. adding vanilla essence is totally optional. add almonds and other nuts of your choice, including dates, if you prefer to..

Add the eggs and mix well with the mixture only after the mixture cools down.. (do not add eggs while the mixture is hot, else the eggs will cook)

Next, add in the dry ingredients and 2 tbsp of jam and mix really well.

The consistency of the batter should not be too thick.. If the batter turns out to be too thick, you can loosen the consistency by adding a little lukewarm water..

Once the batter is ready, prepare the cake tin by greasing it with some oil or butter or ghee and placing a parchment paper at the bottom.. if you do not have parchment paper, you can grease the tin and dust it with some plain flour and tap off the excess flour.

I an using a 8 inch round cake tin to bake this cake.

After preparing the cake tin, pour the cake batter into the tin and the batter should fill up to ¾ th of the tin, not more than that since the cake will rise.

Next, prepare the pan to bake the cake by placing an elevated base for the cake and let it heat up on a medium to low flame..

Once you have placed the cake tin, close it with a lid so that no steam escapes..

Do not place a flat lid, as the cake may rise and hit the lid.

After about 1 hour and 45 minutes, it should be ready..

This cake will take a little longer than normal cakes to cook..

I cooked it on a really low flame..

This cake will taste the best when eaten after a day or two..

Make sure to cut the cake only after it completely cools down, if you’re cutting on the same day.

If you’re baking in the oven, set the temperature to 170C or 325F, for around 1 hour or until fully cooked..

If you leave the cake to bake on a high flame, the inside of the cake will not cook well, and the outside will burn.. so make sure to bake the cake on a lowww flame
