ഗോതമ്പു പൊടി കൊണ്ട് രുചികരമായ പ്ലം കേക്ക് ||Wheat Carrot plum Cake In Pressure Cooker
Description :
Ingredients:
Wheat flour – 1cup {128 g}
Carrot – ¾ cup (Grated)
Eggs – 2
Oil – 8 tbsp
Baking powder- ¾ tsp
Nutmeg powder – ½ tsp
Cinnamon powder – ½ tsp
Vanilla essence – 1 tsp or as per taste
Salt – ½ tsp
For caramelizing
Sugar – ¾ cup
Water – 6 tbsp
Lemon juice – 1 tsp
Salt – 2 cups (for layering the pressure cooker)
Steps:
To caramelize the sugar, heat a heavy bottomed pan and add sugar.
Wait for the sugar to melt on low heat and turn golden brown. Keep stirring.
Add water. The sugar syrup will solidify immediately.
Keep stirring till it dissolves and gets mixed well.
Add lemon juice.
Transfer it to a bowl and let it become lukewarm.
Crack in the eggs to a bowl.
Add nutmeg powder, cinnamon powder, salt and vanilla essence and mix well.
Sieve in the flour and baking powder to the egg mixture.
Add oil, grated carrot and lukewarm sugar syrup. Mix well.
Cover and let it rest for 10 minutes.
Line the bottom and sides of cake pan with butter paper.
I used a 6″ cake pan.
Transfer the cake mixture to the pan. Gently tap the pan to remove air bubbles in the cake mixture.
To bake the cake, add 2 cups of salt to a pressure cooker. You can reuse this salt for 2-3 times.
Level the salt by gently shaking the cooker.
Place an inverted steel bowl as a base on the salt.
Cover without the whistle and heat up the salt on high heat for 3 minutes.
Place the baking pan on to the base and cook covered on high flame for 5 minutes and then switch to medium flame (medium-low for big burner).
Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Open the cooker and check if the cake is cooked after 40 minutes.
Transfer the pan from cooker and allow it to cool.
Remove the cake from pan once cool.
The plum cake is ready. It tastes better after 1-2 days.
Notes:
This can also be baked in a preheated oven also at 375°F/180°C until the toothpick inserted at the center comes out clean.
