കൊതിയൂറും തേങ്ങാ കപ്പലണ്ടി മിട്ടായി Episode :811

Description :

Ingredients:
Peanuts – 250g
Jaggery – 250g to 300g
Shredded coconut – 1 whole
Ghee – 2 tbsp
Water – 1.5 cup

Steps:
Dry roast peanuts. Remove and discard the skin. Coarsely crush the peanuts in a mixie.

Heat a heavy bottomed pan to melt jaggery. Add jaggery and 1.5 cup water.
Once jaggery is melted, add shredded coconut and ghee.
Cook stirring till it starts to thickens.
Add peanuts and keep stirring.
Cook till the mixture becomes dry.
Switch off and let it cool.

Once cool, make small balls out of it by rolling between your palms.
Enjoy your coconut peanut balls.

Store in airtight container at room temperature for a week and in the refrigerator if you are storing for more than a week.

Notes:
-You can recreate this recipe with roasted cashew nuts instead of peanuts.
-You can flavor this with cardamom or cumin powder.
