കുക്കറിൽ കൊതിയേറും മത്തി ബിരിയാണി /PRESSURE COOKER FISH BIRYANI

Description :

Ingredients:

For grinding:
Garlic – 14 cloves
Ginger – 1 big

For marination:
Sardine – 5 big
Turmeric powder – 1 tsp
Red chilly powder – 1 tbsp
Pepper powder

For garnishing:
Onion – 2 medium (thinly sliced)
Turmeric powder – 2 pinches
Cashew nuts

For cooking the rice:
Basmati rice – 2 cups
Water – 2½ cup
Fennel seeds – ½ tbsp
Bay leaves – 2 big
Mint
Coriander leaves
Salt

For the masala:
Onion – 1 medium (thinly sliced)
Green chillies – 4
Turmeric powder – ½ tsp
Red chilly powder – 1 tsp
Tomato – 3 big
Garam Masala – 2 tsp
Coriander leaves – 2 handfuls
Salt

Oil

Steps:

Wash and soak rice for 20-30 minutes. Make a thick paste of ginger and garlic. Cut gashes across the cleaned wish.

Marinate the fish with turmeric powder, red chilly powder, 1.5 tbsp ginger garlic paste, pepper powder and salt. Mix well with hands adding little water, if required. Let it rest for minimum 30 minutes.

Deep fry two medium sized thinly sliced onion till golden brown. Add two pinches of turmeric powder also.
Fry cashew nuts also.

Heat coconut oil in a pan and lightly fry the marinated fish covered on a medium flame.
Remove and set aside.

In the same pan, add onion and green chillies.
Once the onion becomes translucent, add the rest of the ginger garlic paste.
Reduce the heat and saute until the raw smell goes away.
Add turmeric powder and red chilly powder and saute till the raw smell goes away.
Add finely chopped tomato along with salt, garam masala and coriander leaves.
Cover and cook till tomatoes are done.
Add fried fish and coat it well with the masala.
Cover and cook for 5 minutes on medium flame.
Switch off.

In a pressure cooker, add soaked and drained rice, fennel seeds, bay leaves, coriander leaves and mint leaves.
Spread the fish masala on top of it.
Add 2.5 cup water and salt.
Add some coriander and mint leaves on top also.
Cook for 2 whistles on high flame and let the pressure release naturally. Let it sit for another 10 minutes.
Open the cooker and remove the fish.
Transfer the rice to a serving plate.

Garnish with fried onion and cashew nuts.

Notes:

-Do not soak rice for more than 30 minutes.
-You may also garnish with fried coconut bits.
-Coconut oil is recommended for this recipe.
